Course overview

What will I learn?

Week 1

Chocolate ice creams and sorbets, chocolate wafers and sauce

Week 2

Truffles, dipped and rolled. A variety of rich chocolate creams flavoured with a selection of boozy liqueurs

Week 3

Chocolate lava cake. A hot liquid centred cake fresh from the oven and served with a homemade raspberry sorbet

Week 4

Moulded chocolates. Sprayed chocolate moulds filled with a selection of rich creams including; salted caramel, raspberry and pistachio, hazelnut praline, Macha green tea, mint fondants and passion fruit jellies

Week 5

Chocolate fun!! Decoration day, to include piping chocolates, spraying, moulding and garnishing, with a little show piece to take home with you

No formal entry requirements

What can I do after?

NPA Professional Cookery SCQF 4 or SCQF Level 5

Programme Information

Start Date: 5 November 2019

Duration: 2.5 hours per week for 5 weeks

Time: 6.00pm to 8.30pm every Tuesday
