What will I learn?

This course aims to enable the candidate to develop the knowledge, understanding and skills required to price a menus in order to achieve acceptable profits for an organisation. The course includes the following topics:

  • Financial structure of a menu
  • Keeping food costs under control
  • Setting selling price
  • Principles of menu engineering
  • Enhancing performance of dishes
  • The importance of the sales mix

What qualifications do I need?

There are no formal entry requirements for this course, however, as it is delivered online it would be beneficial if the candidate had basic competence in IT and the internet.

This course does not require a personal statement.
