Course overview

What will I learn?

In this 3 hour class you will learn the tricks behind the making of petits fours as carried out by the pastry chef.

This class will teach you how to :

  • Prepare pastry
  • Create fruit pastilles
  • Create Almond Sponge
  • Create macaroons
  • Make ganache
  • Decorate petits fours

You will make:

  • Mini shortbread
  • Passion fruit and mango pastilles
  • Almond and pear frangipane
  • Chocolate macaroons

During the class everyone will work in pairs under the close supervision of a professional pastry chef lecturer and at the end of the class everyone will take away their recipes and petits fours to enjoy at home.
